This framed antique colour illustration is taken from Cassell’s New Universal Cookery Book by Lizzie Heritage, first published in 1896. The print depicts a Victorian dish titled Macédoines in Cases with Asparagus, with asparagus spears rising from a moulded salad of jewel toned vegetables arranged on a footed serving plate.
The illustration has the soft painterly colour and culinary drama associated with late nineteenth century cookery books, when presentation was a central part of fashionable dining. Macédoine is a classical French culinary term for a mixture of finely diced vegetables or fruit, and this particular dish captures the elaborate style of Victorian and Edwardian table decoration.
