This framed antique colour illustration brings a wonderfully theatrical piece of Victorian cookery history to the wall. Taken from Cassell’s New Universal Cookery Book by Lizzie Heritage, first published in 1896, it shows Galantine of Fowl, a tall cylindrical dish of boned and stuffed chicken, glazed in deep amber aspic and topped with ornamental skewers known as hatelets.
The dish is presented on a generous bed of garnishes, with chopped jelly, vegetables and salad leaves arranged around the base. Galantine was a classical French preparation, made by boning, stuffing, rolling and poaching poultry or game before serving it cold, often with an aspic glaze. In the late Victorian and Edwardian kitchen, dishes like this were prized for their skill, structure and dramatic table presence.
The print itself is genuinely Victorian and over 125 years old, with the colour, paper tone and gentle age you would expect from an illustration of this period. Presented in a soft mustard mount within a simple wooden frame, it is ready to hang or display.
It would look excellent in a kitchen, dining room, pantry, breakfast nook or country house style interior, especially alongside antique kitchenware, vintage cookery books, copper pans, botanical prints or other framed Victorian food illustrations.
The framed print is in good antique and vintage condition, with light signs of age to the paper, frame and backing, all in keeping with its history and character.
