Framed Antique Victorian Cookery Illustration of Chartreuse of Chicken

This charming framed antique colour illustration is taken from Cassell’s New Universal Cookery Book by Lizzie Heritage, first published in 1896. The print depicts a beautifully styled Victorian dish titled Chartreuse of Chicken, showing a tall layered moulded dish with chicken and vegetables arranged in alternating bands of red, white and green, set within a darker outer ring and presented on a generous serving plate dressed with salad leaves.
