This charming framed antique colour illustration is taken from Cassell’s New Universal Cookery Book by Lizzie Heritage, first published in 1896. The print depicts a beautifully styled Victorian dish titled Sweetbread Cutlets with Tomato Sauce, showing neatly arranged cutlets set upright with frilled paper cuffs, decorative garnish and a rich tomato sauce, all presented on a generous serving plate.
The illustration has the soft painterly colour and culinary drama associated with late 19th century cookery books, when presentation was an important part of formal dining. Sweetbreads, the culinary name for the thymus or pancreas of veal or lamb, were considered a delicacy on Victorian and Edwardian tables, often served in elaborate cutlet form for dinner parties and special occasions.
This plate has been carefully removed from an original copy of the 1896 first edition for framing, meaning the print itself is genuinely Victorian and over 125 years old. The colour and paper quality carry the character expected from an antique print of this age, giving the piece a lovely sense of history.
